Open your PDF document in preview
Click the "Show Markup Toolbar" button on the tool-box shaped bar

You are prompted by the options of creating a signature by dragging your finger on the pad or signing a piece of paper then scanning it with the webcam.
Once preview captures your signature, it stores it permanently for future purposes.

A captured signature can be accessed by clicking on the "sign" button and selecting it from the pop-up menu.

The signature is usually applied as an image that can be dragged to the preferred position on the document. Other options on the preview toolbar allow drawing of pictures and filling forms if desired.
Click on "file" and the "save" to save your signed document.

Using Adobe fill and sign or mail in iPhone and iPad 

If you own an iPhone or an iPad, you can e-sign your documents with the iOS Mail app thanks to the "markup feature."

It is easier and efficient if you also own a mac and have used the sign feature in preview. The signature synchronizes with your iPad and iPhone so that you don't have to create it again.

The markup feature is efficient but only works if you have to sign the document on the Mail app, for instance, if you are sent a document by mail that requires signing and then emails back.

To sign, you must receive a PDF document by email and click on the attached PDF file. Tap on "Markup and Reply" on the tool-box shaped toolbar at the bottom right corner. Add a signature by clicking on the "signature" button. If you like, you can include a text or draw on the document as an alternative to your saved signatures.

After clicking "done," the mail app creates an email with the attached signed document ready for you to send. You can add text on the email if you wish to accompany a message as you send the document.

If you do not wish to open the document and sign it by mail, you can also use a third party software known as the Adobe Fill and Sign app.

The Adobe app has several perks in using it, such as
the ability to sign an unlimited number of documents for free. It can also capture paper documents to images with your camera and create digital copies of paper forms. 

Adobe Fill and Sign app, just like in iOS is downloaded as a third party software in Android. The features are the same as the Android app, also allowing signing an unlimited number of documents for free.You can also sign and share the document using a share button in the app.
